Breakfast of Champions: Brioche, Duck Eggs and Champagne


The best part of waking up, OK the second best part of waking up can be breakfast. Most mornings, I start my day with an espresso, toast, or a piece of fruit. But every now and then, that should be accompanied by a side of decadence, a breakfast of champions, if you will.

I like cooking. It’s fun, creative and from time to time, I even come up with something that tastes as good as it looks.  The key to cooking, at least in my eyes is coming up with something new.  I spotted the duck eggs at the farmers market earlier in the week, which became the inspiration for this easy to prepare meal.

Grill the brioche, layer it with Prosciutto, shaved Manchego, frisee and top it off with a perfectly poached duck egg and breakfast is served! But don’t forget to pop the Champagne!
