When to Drink Chateau Saint Pierre, Anticipated Maturity, Decanting Time
Chateau Saint Pierre can be enjoyed on the young side with 1-2 hours of decanting. This allows the wine to soften and open its perfume. Older vintages might need very little decanting, just enough to remove the sediment.
However, I find the wine is usually better with between 4-7 years of bottle age. Of course, that can vary slightly, depending on the vintage character. In the best years, the Chateau Saint Pierre Pomerol will best between 5-17 years of age after the vintage.
Serving Chateau Saint Pierre with Wine, Food, Pairing Tips
Chateau Saint Pierre is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift. Chateau Saint Pierre is best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes.
Chateau Saint Pierre is also good when matched with Asian dishes, hearty fish courses like tuna, mushrooms, and pasta.
Madame Francois de Lavaux and her family also own 3 additional estates in the Pomerol appellation, Clos du Vieux Plateau Certan, Chateau Haut Cloquet and Chateau La Renaissance.
