Dice your Persimmon. Use the hard Persimmons. They feel like apples. Dice the fruit. Cut the Brioche into squares. Dip them in an egg wash. Toast them in a hot pan with butter. Sear the Foie Gras. Deglaze the pan with the Persimmons. Plate and drizzle with maple syrup.
