Ahi with Pea Caviar

Rare Ahi Tuna with English Pea Caviar and Forbidden Rice for dinner paired with mature, Bordeaux wine made for a perfect pairing.  The key the dish is obtaining the freshest tuna possible and not over cooking it.  Although I must admit making pea caviar was not worth the effort.  While it looks amazing, it’s a lot work.  Note to self, next time just use fresh peas.
