Elegance galore is what you find here, along with the essence of an oceanic breeze, dried flowers, cigar box, and red cherries. Long, silky and so easy to drink, the bottle was gone far too quickly. It is not a wine to continue holding as it is drinking at its absolute peak, or perhaps past it. Drink from 2024-2029.

From a magnum, this was beautiful in every sense of the word. The floral, crushed stone, truffle, plum, cherry and earthy nose could keep you busy all night long. On the palate, the refined, wine is fresh, with a focus on elegant textures, sweet red fruits and the patina of age.

More than fully mature aromas of bacon fat, brown sugar, truffle, earth, tobacco leaf, stone and cherry are present as soon as the wine hits the glass. Medium/full bodied with a short, tart, cherry and cranberry finish. This bottle was much better on the nose than the palate. Owners of this rare wine should know, it requires consumption.

When to Drink Chateau Canon, Anticipated Maturity, Decanting Time

Chateau Canon is much better with at least 10-15 years of aging in good vintages. Young vintages can be decanted for 2-3 hours or more. This allows the wine to soften and open its perfume.

Older vintages might need very little decanting, just enough to remove the sediment. Chateau Canon offers its best drinking and should reach peak maturity between 12-40 years of age after the vintage.

Serving Chateau Canon with Wine and Food Pairings

Chateau Canon is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift.

Chateau Canon is best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes. Chateau Canon is also good when matched with Asian dishes, rich fish courses like tuna, mushrooms, and pasta.
