Château Canon (St. Émilion Grand Cru)
A rare vintage from the war years, and only the second wine from 1940 I've tasted. Light in color and on the palate, yet this is quite charming. Focused on bright red fruits, with tobacco leaves, cedar, and crushed stones in the nose, the palate was fresh, crisp, and elegant, leaving you with leafy herbs that topped the raspberries and strawberries in the finish. When to Drink Chateau Canon, Anticipated Maturity, Decanting Time
Chateau Canon is much better with at least 10-15 years of aging in good vintages. Young vintages can be decanted for 2-3 hours or more. This allows the wine to soften and open its perfume.
Older vintages might need very little decanting, just enough to remove the sediment. Chateau Canon offers its best drinking and should reach peak maturity between 12-40 years of age after the vintage.
Serving Chateau Canon with Wine and Food Pairings
Chateau Canon is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift.
Chateau Canon is best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes. Chateau Canon is also good when matched with Asian dishes, rich fish courses like tuna, mushrooms, and pasta.
