Oh my God! That looks amazing! I love chestnuts. What do you pair this dish with? It does not read like it would work well with red wines? Are you saying it's time for me to span my horizons?
As a Riesling-aficionado I would recommend a 2009 Keller "Hubacker" Grand Cru Riesling or from Burgundy a 2007 Coche-Dury "Meursault-Genevrieres".
