I had a dinner 2 weeks ago and served as a starter "Beetroot carpaccio with smoked trout". It was a huge success and such easy to make in advance.
Important is to use a good olive oil & aceto balscamico.
Ingredients
4 pre-cooked beetroots
250g smoked trout (or more!)
2 tbsp chopped chives
6-9 tbsp olive oil
2 tbsp aged aceto balsamico (12 years!)
